Vegetarian Burgers with Bulgur

  • 1/4 cup # 2 Medium or #3 Coarse Bulgur wheat
  • 2 tbsp. plain yogurt
  • 1 cup boiling water
  • 1 tsp. salt
  • 1 small small onion (minced)
  • 1/2 tsp. coarsely ground black pepper
  • 3 cloves garlic (minced)
  • 1/2 tsp. cumin
  • 15-18 sprigs sprigs parsley (minced)
  • 1/2 tsp. cayenne pepper
  • 2 eggs
  • 1/2 cup Bread crumbs
  • 3 cups cooked garbanzo beans
  • 1 tbsp. oil
  1. Place bulgur in a 1-quart bowl and cover with the boiling water. Let rest 30 minutes. Drain. Place bulgur with all remaining ingredients except bread crumbs and oil in a blender or food processor. Puree to a smooth paste. Shape 1/2 cup into a patty and pat on bread crumbs; repeat with remaining mixture. Chill for 1 hour. To cook in a skillet, heat oil over medium heat, add burgers to skillet and sauté for 7 minutes. Turn burgers over and sauté on second side for 3 minutes. To grill, place patties over heated barbecue, cook for 3 minutes and turn to cook on second side for 3 minutes.
