Serves 4
Ingredients
1 cup #3 coarse bulgur wheat
2 cups boiling water
3 bunches coriander including half stems, shredded
1 bunch parsley shredded
1/2 red onion, finely diced
1/2 lemon zested
1 lemon juiced
1/2 cup extra virgin olive oil
Salt to taste
1/2 cucumber, peeled and diced
Method
Soak bulgur wheat in boiling water for ten minutes
Pour into strainer and set aside
Combine coriander, tomatoes, cucumber, onion, lemon zest, lemon juice and olive oil in a large bowl, mix well. Add bulgur to bowl, season well and serve immediately.
