Tomato Bulgur Salad

  • 1 1/2 cups #1 fine bulgur
  • Salt and pepper
  • 8 oz. tomato sauce
  • 1 green pepper (finely chopped)
  • 1/2 cup corn oil
  • 3 scallions (finely chopped)
  • 3 tbsp. lemon juice
  • 1/2 bunch parsley (finely chopped)
  1. Mix bulgur, tomato sauce, oil, lemon juice, salt and pepper. Let stand for about 1 hour. Blend in the chopped vegetables. Mix well.
