Tomato Bulgur Salad
- 1 1/2 cups #1 fine bulgur
- Salt and pepper
- 8 oz. tomato sauce
- 1 green pepper finely chopped
- 1/2 cup corn oil
- 3 scallions finely chopped
- 3 tbsp. lemon juice
- 1/2 bunch parsley finely chopped
- Mix bulgur, tomato sauce, oil, lemon juice, salt and pepper. Let stand for about 1 hour. Blend in the chopped vegetables. Mix well.
