Tabouli with Tarragon
- 1 cup #1 fine bulgur
- 2 medium sprigs tarragon (minced)
- 2 cups boiling water
- 1 tbsp. fresh mint (minced)
- 1 large tomato (chopped)
- 2 tbsp. olive oil
- 3 scallions (including tops, chopped)
- 1 cup fresh parsley (minced)
- 1 tbsp. tamari or soy sauce
- In a large bowl, soak the bulgur in boiling water until all the water is absorbed, about 30 minutes. (Drain if necessary.) Add tomato, onions, parsley, tarragon, and mint. In a small bowl, mix together olive oil, lemon juice, and tamari. Add to the salad mixture, toss well, and refrigerate until served.
