Tabouli Salad

Ingredients

  • 1 cup boiling water
  • 4 tbsp. fresh parsley chopped
  • 1 cup #1 fine bulgur
  • 2 tbsp. mint chopped
  • 1 cucumber diced
  • 1 tsp. salt
  • 2 large tomatoes diced
  • 1/4 tsp. pepper
  • 4 to 6 green onions thinly sliced
  • 1/4 cup lemon juice
  • 1 green pepper diced
  • 1/2 cup olive oil

Instructions

  • Combine water and bulgur; let stand 1 hour or until all water is absorbed. Rinse, drain and squeeze out all excess water. Combine in salad bowl with remaining ingredients. Let stand in refrigerator for at least 8 hours.
