Tabouli Salad

  • 1 cup boiling water
  • 4 tbsp. fresh parsley (chopped)
  • 1 cup #1 fine bulgur
  • 2 tbsp. mint (chopped)
  • 1 cucumber (diced)
  • 1 tsp. salt
  • 2 large tomatoes (diced)
  • 1/4 tsp. pepper
  • 4 to 6 green onions (thinly sliced)
  • 1/4 cup lemon juice
  • 1 green pepper (diced)
  • 1/2 cup olive oil
  1. Combine water and bulgur; let stand 1 hour or until all water is absorbed. Rinse, drain and squeeze out all excess water. Combine in salad bowl with remaining ingredients. Let stand in refrigerator for at least 8 hours.
