Here is a terrific bulgur soup recipe from Ever Open Sauce. I love how well the taste and nutritional value of bulgur wheat is described in the recipe. This soup is really tasty given the heat from harissa that can be dialed up or down based on your desired taste. 

INGREDIENTS

  • 2 Tbsp olive oil
  • 2 small onions
  • 3/4 cup uncooked #3 coarse bulgur wheat – buy Sunnyland Mills Bulgur Wheat here
  • 4 cloves garlic crushed
  • 2 large carrots peal and cut into small pieces
  • 4 celery stalks
  • 2 Tablespoons harissa paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 1/2 caraway seeds
  • 2 1/2 cups cooked chick peas
  • 5 cups vegetable stock
  • salt and pepper
