Sara’s Oatmeal Cookies

  • 2 cubes softened butter (not melted)
  • 1 tbsp. vanilla extract
  • 2 eggs
  • 1/2 cup Splenda brown sugar blend
  • 1/2 cup Splenda granulated
  • 1 tbsp. baking soda
  • 1 tsp. sea salt
  • 1/2 cup all purpose flour
  • 1-3/4 cups whole wheat flour
  • 1/4 cup ground flax
  • 1 cup coarsely ground walnuts
  • 2 cups old fashioned oats
  • 3/4 cup miniature chocolate chips
  1. Preheat oven to 350 degrees.
  2. Blend the butter, vanilla and eggs until creamy. Mix the Splenda, baking soda, sea salt and flours in a large bowl. Add the creamed mixture and mix until a dough forms. Add the flax and walnuts to the dough and mix. Slowly add the oats while mixing then add chocolate chips. Scoop with a small cookie scooper onto a baking sheet(s). Bake for 16 minutes or until golden brown; cool.
  3. Make 60 small cookies.
