Sara's Oatmeal Cookies
Servings 60 small cookies
Ingredients
- 2 cubes softened butter not melted
- 1 tbsp. vanilla extract
- 2 eggs
- 1/2 cup Splenda brown sugar blend
- 1/2 cup Splenda granulated
- 1 tbsp. baking soda
- 1 tsp. sea salt
- 1/2 cup all purpose flour
- 1-3/4 cups whole wheat flour
- 1/4 cup ground flax
- 1 cup coarsely ground walnuts
- 2 cups old fashioned oats
- 3/4 cup miniature chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Blend the butter, vanilla and eggs until creamy. Mix the Splenda, baking soda, sea salt and flours in a large bowl. Add the creamed mixture and mix until a dough forms. Add the flax and walnuts to the dough and mix. Slowly add the oats while mixing then add chocolate chips. Scoop with a small cookie scooper onto a baking sheet(s). Bake for 16 minutes or until golden brown; cool.
- Make 60 small cookies.
