Sara’s Healthy Cookies

  • 2 cups softened butter (not melted)
  • 1 tbsp. vanilla extract
  • 2 eggs
  • 1/2 cup Splendid granulated white sugar blend
  • 1/2 cup Splendid brown sugar
  • 1 tbsp. baking soda
  • 1 tsp. sea salt
  • 1-1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 cups old fashion rolled oats
  • 1/4 cup ground flaxseed
  • 1 cup chopped walnuts
  • 3/4 cup chocolate chips
  • 1 tbsp. water
  1. Cream together softened butter, vanilla, and eggs (do not over mix). Mix brown sugar, granulated white sugar, baking soda and sea salt with whole wheat flour and all-purpose flour.
  2. Add creamed mixture to dry mixture; add 1 Tbsp. water as needed. Mix together then add flax, walnuts, oats and chocolate chips. Spoon 1-inch size round balls onto ungreased cookie sheet (best to use a small cookie scoop).
  3. Pre-heat oven to 350 degrees and bake for 15-16 minutes.
