Old Fashioned Armenian Bulgur Salad
- 1 cup #1 fine or #2 medium bulgur
- 3 tbsp. minced parsley
- 2 cups water
- 1 tsp. salt
- 1 cucumber (sliced cross-wise)
- 1/4 tsp. pepper
- 2 large tomatoes (sliced)
- 1/2 cup olive oil
- 1 large onion (sliced)
- 1/4 lemon juice
- 1/2 bell pepper (diced)
- Combine bulgur and water; cover and bring to boil, then simmer over low heat for 10 to 15 minutes until water is absorbed. Chill. Combine with remaining ingredients. Mix until dressing is well distributed.
