Old Fashioned Armenian Bulgur Salad

Ingredients

  • 1 cup #1 fine or #2 medium bulgur
  • 3 tbsp. minced parsley
  • 2 cups water
  • 1 tsp. salt
  • 1 cucumber sliced cross-wise
  • 1/4 tsp. pepper
  • 2 large tomatoes sliced
  • 1/2 cup olive oil
  • 1 large onion sliced
  • 1/4 lemon juice
  • 1/2 bell pepper diced

Instructions

  • Combine bulgur and water; cover and bring to boil, then simmer over low heat for 10 to 15 minutes until water is absorbed. Chill. Combine with remaining ingredients. Mix until dressing is well distributed.
