Mexican Bulgur Chili

Ingredients

  • 2 tbsp. salad oil
  • 1/2 tsp. pepper
  • 1 lb. ground beef
  • 1/2 tsp. oregano
  • 3/4 cup chopped onions
  • 1/4 tsp. cumin seed
  • 3 cloves garlic minced
  • Few grains cayenne red pepper
  • 1 1/2 tbsp. chili powder
  • 5 cups beef stock or canned bouillon
  • 1 1/2 tbsp. flour
  • 1 cup tomato puree
  • 1 tsp. salt
  • 1 cup #2 medium or #3 coarse bulgur

Instructions

  • Heat in heavy skillet salad oil. Add ground beef, onions, garlic. Saut√© over moderate heat until onions are lightly browned. Blend in chili powder, flour, salt, pepper, oregano, cumin seed, cayenne red pepper , beef stock or bouillon, tomato puree, and bulgur. Cover and simmer (stir occasionally) over low heat for about 1 hour.
