Mexican Bulgur Chili

  • 2 tbsp. salad oil
  • 1/2 tsp. pepper
  • 1 lb. ground beef
  • 1/2 tsp. oregano
  • 3/4 cup chopped onions
  • 1/4 tsp. cumin seed
  • 3 cloves garlic (minced)
  • Few grains cayenne red pepper
  • 1 1/2 tbsp. chili powder
  • 5 cups beef stock or canned bouillon
  • 1 1/2 tbsp. flour
  • 1 cup tomato puree
  • 1 tsp. salt
  • 1 cup #2 medium or #3 coarse bulgur
  1. Heat in heavy skillet salad oil. Add ground beef, onions, garlic. Sauté over moderate heat until onions are lightly browned. Blend in chili powder, flour, salt, pepper, oregano, cumin seed, cayenne red pepper , beef stock or bouillon, tomato puree, and bulgur. Cover and simmer (stir occasionally) over low heat for about 1 hour.
