Merry Vegetarian Grapes and Grains

  • 1/4 cup wild rice
  • dash ground black pepper
  • 2 cups water (divided)
  • 1/2 cup #2 medium or #3 coarse bulgur
  • 1/4 cup chopped celery
  • 1 cup vegetable broth
  • 2 tbsp. chopped onion
  • 1 cup halved seedless grapes
  • 2 tsp. vegetable oil
  • 1/2 cup diced tomato
  • 1/4 tsp. dried sage
  • 2 tbsp. chopped parsley
  • 1/2 tsp. salt
  • sprig fresh sage
  1. Soak wild rice in 1 cup water for at least 1 hour. Drain. Sauté celery and onion in oil until onion I tender. Season with sage, salt and pepper. Add remaining 1 cup water, bring to boil. Reduce heat, cover and simmer 45 minutes. Rinse and drain bulgur. Bring broth to boil; add bulgur. Return to boil, reduce heat, cover and simmer 10 to 15 minutes or until all liquid is absorbed. Toss wild rice, bulgur and grapes together. Garnish with tomato, parsley and sage.
