After 6 months at home many of us are ready to start taking control of our our health again and one way to do that is to eat right. Start by making salads work for you by adding some whole grains. Unprocessed grains are better for our bodies and have many health benefits, so we should try to include them as often as possible in our diets. Try this

Mediterranean Style Bulgur and Avocado Salad

Ingredients
1 cup #3 coarse bulgur wheat
1-1/2 cups boiling water
1/3 teaspoon salt
1 yellow pepper, diced
1 red pepper, diced
1 red onion cut in small cubes
1-1/2 tablespoons olive oil
2-1/2 teaspoons dried oregano
salt and pepper
2 avocado, peeled, pitted and diced, and tossed in fresh lemon juice to avoid browning
1 cucumber, seeded and diced
1/2 cup sun dried tomatoes, chopped
1/4 cup chopped green olives
3.5 ounces feta, crumbled
1/4 cup chopped fresh mint
1/2 tablespoon grated lemon zest

DRESSING
1/3 cup olive oil
2-1/2 teaspoons lemon juice
1 ounce red wine vinegar
1/4 tablespoon dried oregano
1/2 ounce honey
salt and pepper

To Prepare:
Bring to water to a boil, add bulgur wheat. Cook until tender, about 10 minutes.
Drain and transfer to a bowl.
Meanwhile, combine the peppers, red onion and dried oregano on a baking tray.
Drizzle with olive oil and season with salt and pepper. Mix well.
Roast at 350°F for 20 minutes. Transfer to the bowl with the bulgur.
Stir in the rest of the ingredients.

DRESSING: Whisk together all the ingredients until well combined, pour over the dressing and serve.
