Lucky Lucci Lentil Soup with Grano
- 1/3 cup chopped onion
- 1/3 cup chopped bell pepper
- 2 minced garlic cloves
- 2 tablespoons olive oil
- 1-1/2 qt. water
- 1/3 cup diced carrots
- 1 cup brown lentils
- 1/3 cup Grano or pearled wheat
- 1 sm. can tomato sauce
- 1/2 cup small shell macaroni optional
- salt and pepper to taste
- Sauté onion , bell pepper and garlic in olive oil. In a 3-qt. pan, add water, carrots, lentils and Grano. Cook on medium heat. Add tomato sauce and salt/pepper. Simmer 30 minutes or until tender. Add macaroni in the last 5 minutes. Sprinkle with Parmesan cheese and drizzle with olive oil.
