Kisir is a perfect salad for summer and a summer classic in Turkey. Kisir is made with Nar ekşisi, which is reduced pomegranate juice and has a similar taste to balsamic vinegar. Thicker versions usually have a more robust taste. This recipe comes from Dailysabah.com

Ingredients

  • 1-1/2 cups of #1 fine bulgur wheat – You can buy it here
  • 3 cups of  boiling water
  • 2 tablespoons tomato paste
  • 1/3 cup olive oil
  • juice of a lemon
  • 2 tablespoons nar ekşisi (pomegranate molasses)
  • green onions (to taste)
  • half a bundle fresh mint
  • half a bundle parsley
  • salt, red pepper flakes
  • lettuce to serve

Instructions

Pour the boiling water over the bulgur, replace lid and let the bulgur soak 10-15 minutes.

Once all the water has been absorbed, add the tomato paste and olive oil and mix well. Add salt, red pepper flakes, lemon juice and the nar ekşisi (pomegranate syrup) as well as the chopped green onions, mint and parsley. Give it all a good mix and serve.
