Italian Bulgur Minestrone

  • 2 tbsp. olive oil
  • 1/4 tsp. minced garlic
  • 3/4 cup chopped onions
  • 1/2 cup #3 coarse bulgur
  • 3/4 lb. lb. beef soup meat (optional)
  • Salt
  • 3/4 cup chopped celery
  • 1/4 tsp. pepper
  • 5 cups water
  • 1/4 tsp. oregano
  • 1/2 cup canned tomatoes
  • 1/2 cup fresh or frozen green beans or peas
  • 1/2 cup shredded cabbage
  • 1/2 cup sliced zucchini
  • 1/4 cup minced parsley
  • 1/2 cup kidney beans
  • 1/4 cup sliced carrots
  1. Sauté onions in oil until golden. Add meat and celery, then cook in water until meat is tender (1 1/2 hrs.). Remove meat, dice, and return to stock. Add tomatoes, cabbage, parsley, carrots, and garlic; cook for 15 minutes. Add bulgur and remaining ingredients and cook for 20 minutes more. Garnish with grated parmesan cheese.
