Italian Bulgur Minestrone

Ingredients
- 2 tbsp. olive oil
- 1/4 tsp. minced garlic
- 3/4 cup chopped onions
- 1/2 cup #3 coarse bulgur
- 3/4 lb. lb. beef soup meat optional
- Salt
- 3/4 cup chopped celery
- 1/4 tsp. pepper
- 5 cups water
- 1/4 tsp. oregano
- 1/2 cup canned tomatoes
- 1/2 cup fresh or frozen green beans or peas
- 1/2 cup shredded cabbage
- 1/2 cup sliced zucchini
- 1/4 cup minced parsley
- 1/2 cup kidney beans
- 1/4 cup sliced carrots
Instructions
- Sauté onions in oil until golden. Add meat and celery, then cook in water until meat is tender (1 1/2 hrs.). Remove meat, dice, and return to stock. Add tomatoes, cabbage, parsley, carrots, and garlic; cook for 15 minutes. Add bulgur and remaining ingredients and cook for 20 minutes more. Garnish with grated parmesan cheese.
