Hearty Lentil Soup with Bulgur
- 1 lb. lentils picked and washed
- 2 tbsp. fresh mint
- 1/4 cup #3 coarse bulgur
- Salt and pepper
- 1 large onion sliced lengthwise
- 1 tbsp. lemon juice
- Cooking spray
- Cook lentils and bulgur in 4 cups water for 30 minutes. Sauté onion in oil until golden; add to soup. Add mint and seasonings; simmer a little longer. Serve hot or cold.
