Hearty Lentil Soup with Bulgur

  • 1 lb. lentils (picked and washed)
  • 2 tbsp. fresh mint
  • 1/4 cup #3 coarse bulgur
  • Salt and pepper
  • 1 large onion (sliced lengthwise)
  • 1 tbsp. lemon juice
  • Cooking spray
  1. Cook lentils and bulgur in 4 cups water for 30 minutes. Sauté onion in oil until golden; add to soup. Add mint and seasonings; simmer a little longer. Serve hot or cold.
