Hearty Bulgur Salad

  • 1 cup #2 medium or #3 coarse bulgur
  • 2 to 4 tbsp. minced parsley
  • 2 cups cold water
  • 1 tbsp. finely chopped mint
  • 1 diced cucumber
  • 1 tsp. salt (optional)
  • 2 large tomatoes (diced)
  • 1/4 tsp. white pepper
  • 4 to 6 thinly sliced green onions
  • 1/3 cup lemon juice
  • 1/2 cup diced green bell pepper
  • 1/4 cup olive oil
  • 10 to 12 thinly sliced radishes
  1. Combine bulgur and water in bowl; let stand until bulgur is soft–about 1/2 hour. In large salad bowl, combine the remaining ingredients. Add bulgur and toss lightly until dressing is well distributed.
