Hearty Bulgur Salad

Ingredients
- 1 cup #2 medium or #3 coarse bulgur
- 2 to 4 tbsp. minced parsley
- 2 cups cold water
- 1 tbsp. finely chopped mint
- 1 diced cucumber
- 1 tsp. salt optional
- 2 large tomatoes diced
- 1/4 tsp. white pepper
- 4 to 6 thinly sliced green onions
- 1/3 cup lemon juice
- 1/2 cup diced green bell pepper
- 1/4 cup olive oil
- 10 to 12 thinly sliced radishes
Instructions
- Combine bulgur and water in bowl; let stand until bulgur is soft--about 1/2 hour. In large salad bowl, combine the remaining ingredients. Add bulgur and toss lightly until dressing is well distributed.
