Hearty Bulgur Pilaf Casserole

  • 1 lb. ground beef
  • 1/2 cup sliced green onion
  • 1/2 cup chopped green pepper
  • 3/4 cup #3 coarse bulgur wheat
  • 1 clove garlic (minced)
  • 1 16 oz. can tomatoes (cut up)
  • 1 lb. zucchini (1/4 in. slices)
  • 1 tsp. sugar
  • 1 tbsp. Worcestershire sauce
  • 1 1/4 tsp. dried oregano
  • dash bottled hot pepper sauce
  • 1 cup grated cheddar cheese
  1. In large skillet cook beef, onion, green pepper, bulgur wheat and garlic until meat is browned and onion and pepper are tender. Drain. Stir in undrained tomatoes, zucchini, Worcestershire, 1 1/4 tsp. salt, oregano, sugar, and pepper sauce. Turn into 2 qt. casserole. Bake, uncovered, in 350° oven for 45 minutes. Sprinkle cheese on top.
