Clay Pot Chicken and Grano

Ingredients
- 1 cup chicken broth
- 1 1/4 cup dry red wine
- 3 tbsp. olive oil
- 1 3/4 lbs. chicken breasts skinless and boneless
- 1 red bell pepper chopped
- 1 handful spinach
- 2 cups dry Grano
- 10 cloves garlic
- 12-15 baby carrots
- 1/2 cup medium onion chopped
- 1/4 lb. medium mushrooms sliced
- 10 sprigs thyme
- 8 celery stalks sliced
- 1 can condensed cream of mushroom soup
- salt and pepper to taste
Instructions
- Soak clay pot for 1/2 hour in room temperature water.
- Add chicken broth, wine, olive oil, soup, onion, mushrooms and Grano to the clay pot; mix well. Layer spinach, chicken, garlic, carrots, thyme, celery and bell pepper. Put cover on clay pot and put in cold oven. Set temperature to 450 degrees and cook for 1 hour, 45 minutes. Let sit in clay pot for 15 minutes and serve
