Clay Pot Chicken and Grano

  • 1 cup chicken broth
  • 1 1/4 cup dry red wine
  • 3 tbsp. olive oil
  • 1 3/4 lbs. chicken breasts (skinless and boneless)
  • 1 red bell pepper (chopped)
  • 1 handful spinach
  • 2 cups dry Grano
  • 10 cloves garlic
  • 12-15 baby carrots
  • 1/2 cup medium onion (chopped)
  • 1/4 lb. medium mushrooms (sliced)
  • 10 sprigs thyme
  • 8 celery stalks (sliced)
  • 1 can condensed cream of mushroom soup
  • salt and pepper (to taste)
  1. Soak clay pot for 1/2 hour in room temperature water.
  2. Add chicken broth, wine, olive oil, soup, onion, mushrooms and Grano to the clay pot; mix well. Layer spinach, chicken, garlic, carrots, thyme, celery and bell pepper. Put cover on clay pot and put in cold oven. Set temperature to 450 degrees and cook for 1 hour, 45 minutes. Let sit in clay pot for 15 minutes and serve
