Chicken Gumbo with Bulgur

  • 1/4 cup diced green bell pepper
  • 2 tbsp. chopped parsley
  • 1/4 cup chopped onion
  • Salt
  • 2 tbsp. olive oil
  • 1/4 tsp. pepper
  • 6 cups water or chicken stock
  • 1/2 tsp. fine herbs
  • 1 can (16 oz.) tomatoes
  • few grains cayenne pepper
  • 2/3 cup #2 medium or #3 coarse bulgur
  • 1 to 2 cups diced cooked chicken
  • 1 1/2 cups sliced okra
  1. Cook vegetables except okra in stock with olive oil for 20 minutes. Add bulgur, okra, parsley, and seasonings; cook for 20 minutes more. Add chicken; continue to simmer for about 5 minutes more. Variations: 1. Substitute crab meat, fresh cooked or canned, for chicken or 2. Substitute cooked, cleaned shrimp for chicken.
