Chicken Bulgur Salad

Ingredients
- 1/2 cup #2 medium bulgur
- 1/4 cup orange juice
- 1 8 oz. carton plain yogurt
- 1/2 tsp. salt
- 1/4 cup snipped dried apricots
- 1/2 tsp. crushed dried oregano
- 1/4 cup raisins
- 1 large tomato chopped
- 1/4 cup snipped parsley
- Lettuce leaves
- 1/4 cup sliced green onions
- 8 oz. slice cooked chicken breast
Instructions
- In medium bowl, mix bulgur, yogurt, apricots, raisins, parsley, green onions, orange juice, salt, and oregano. Cover and chill for 3 to 24 hours. Add tomato to bulgur mixture; stir gently to mix. Top lettuce leaves with chicken and bulgur mixture.
