Chicken Bulgur Salad

  • 1/2 cup #2 medium bulgur
  • 1/4 cup orange juice
  • 1 8 oz. carton plain yogurt
  • 1/2 tsp. salt
  • 1/4 cup snipped dried apricots
  • 1/2 tsp. crushed dried oregano
  • 1/4 cup raisins
  • 1 large tomato (chopped)
  • 1/4 cup snipped parsley
  • Lettuce leaves
  • 1/4 cup sliced green onions
  • 8 oz. slice cooked chicken breast
  1. In medium bowl, mix bulgur, yogurt, apricots, raisins, parsley, green onions, orange juice, salt, and oregano. Cover and chill for 3 to 24 hours. Add tomato to bulgur mixture; stir gently to mix. Top lettuce leaves with chicken and bulgur mixture.
