Bulgur with Herbs Lettuce Wraps

For Lettuce Wraps:

  • 1 cup #3 coarse Bulgur Wheat
  • 2 bunches parsley
  • 1 bunch chives
  • 1 bunch mint
  • 1 bunch basil
  • 2 small cucumbers
  • 2 small tomatoes
  • Juice of 1 lemon
  • 1/3 cup olive oil
  • 3 cloves garlic
  • Salt and pepper to taste
  • Romaine lettuce leaves (to use as wraps)

To make Greek Yogurt Tzatziki:

  • 2 cups Greek yogurt
  • 2-3 crushed garlic cloves
  • Salt and pepper to taste
  1. Soak bulgur in boiling water for 20 minutes or until al dente. Finely chop all herbs, cucumbers and tomatoes. Add remaining ingredients except for lettuce leaves and mix well; wrap in lettuce leaves and serve with Greek yogurt tzatziki.
  2. If using low-fat Greek yogurt, add 1 tsp. of low-fat mayonnaise for a creamier texture and flavor. Optional: Add diced cucumber and/or finely chopped chives.
