Bulgur with Herbs Lettuce Wraps

Ingredients

For Lettuce Wraps:

  • 1 cup #3 coarse Bulgur Wheat
  • 2 bunches parsley
  • 1 bunch chives
  • 1 bunch mint
  • 1 bunch basil
  • 2 small cucumbers
  • 2 small tomatoes
  • Juice of 1 lemon
  • 1/3 cup olive oil
  • 3 cloves garlic
  • Salt and pepper to taste
  • Romaine lettuce leaves to use as wraps

To make Greek Yogurt Tzatziki:

  • 2 cups Greek yogurt
  • 2-3 crushed garlic cloves
  • Salt and pepper to taste

Instructions

  • Soak bulgur in boiling water for 20 minutes or until al dente. Finely chop all herbs, cucumbers and tomatoes. Add remaining ingredients except for lettuce leaves and mix well; wrap in lettuce leaves and serve with Greek yogurt tzatziki.
  • If using low-fat Greek yogurt, add 1 tsp. of low-fat mayonnaise for a creamier texture and flavor. Optional: Add diced cucumber and/or finely chopped chives.
