Bulgur with Herbs Lettuce Wraps
 Servings 8
Ingredients
For Lettuce Wraps:
- 1 cup #3 coarse Bulgur Wheat
 - 2 bunches parsley
 - 1 bunch chives
 - 1 bunch mint
 - 1 bunch basil
 - 2 small cucumbers
 - 2 small tomatoes
 - Juice of 1 lemon
 - 1/3 cup olive oil
 - 3 cloves garlic
 - Salt and pepper to taste
 - Romaine lettuce leaves to use as wraps
 
To make Greek Yogurt Tzatziki:
- 2 cups Greek yogurt
 - 2-3 crushed garlic cloves
 - Salt and pepper to taste
 
Instructions
- Soak bulgur in boiling water for 20 minutes or until al dente. Finely chop all herbs, cucumbers and tomatoes. Add remaining ingredients except for lettuce leaves and mix well; wrap in lettuce leaves and serve with Greek yogurt tzatziki.
 - If using low-fat Greek yogurt, add 1 tsp. of low-fat mayonnaise for a creamier texture and flavor. Optional: Add diced cucumber and/or finely chopped chives.
