Bulgur Wheat Stuffing

  • 1 medium onion (chopped)
  • 2 cups hot meat broth or bouillon
  • 1/2 bell pepper (chopped)
  • cooked giblets (chopped)
  • 1/2 cup celery (diced)
  • 1/4 tsp. poultry seasoning
  • 1/4 cup shortening
  • salt and pepper (to taste)
  • 1 cup #3 coarse bulgur
  1. Gently fry onion, pepper and celery in shortening until tender – not brown. Add bulgur wheat and stir until each grain is coated with fat. Add hot broth, giblets and seasonings. Allow one cup stuffing for each pound of poultry. Use as a stuffing for chicken, turkey, pheasant or duck. It is especially good with wild game as it tastes much like wild rice.
