Bulgur Wheat Stuffing

Servings 2 cups


  • 1 medium onion chopped
  • 2 cups hot meat broth or bouillon
  • 1/2 bell pepper chopped
  • cooked giblets chopped
  • 1/2 cup celery diced
  • 1/4 tsp. poultry seasoning
  • 1/4 cup shortening
  • salt and pepper to taste
  • 1 cup #3 coarse bulgur


  • Gently fry onion, pepper and celery in shortening until tender - not brown. Add bulgur wheat and stir until each grain is coated with fat. Add hot broth, giblets and seasonings. Allow one cup stuffing for each pound of poultry. Use as a stuffing for chicken, turkey, pheasant or duck. It is especially good with wild game as it tastes much like wild rice.
