Bulgur Salad Salsa Style

  • 1 1/2 cups #2 medium or #3 coarse bulgur
  • 1/2 cup chopped cilantro
  • 6 cups boiling water
  • 1/4 cup fresh lime juice
  • 2 diced plum tomatoes
  • 2 tsp. minced jalapeno chili
  • 2 chopped green onions
  • 1 tsp. minced garlic
  • 1 diced cucumber
  • 3/4 tsp. salt
  • 1 cup yellow pepper
  • 1/2 tsp. pepper
  • 1 cup thinly sliced radish
  • 1/3 cup olive oil
  1. Cover bulgur with boiling water in large bowl. Let stand 1 hour. Drain in colander and shake well until dry. Return to bowl and stir in vegetables and cilantro. Whisk lime juice, jalapeno, garlic, salt and pepper together in mixing bowl. Gradually whisk in oil. Pour dressing over salad and toss well to coat. Serve at once.
