Bulgur Pancakes

  • 1 cup #1 fine or #2 medium bulgur
  • 2 tbsp. sugar
  • 1 1/4 cups water
  • 1/4 cup cooking oil
  • 2 tsp. salt
  • 2 cups water
  • 1 tbsp. baking powder
  • 2 cups flour
  • 2 tbsp. nonfat dry milk
  1. Soak bulgur in water for 30 minutes, then drain if necessary. Stir bulgur, flour, salt, baking powder, dry milk, and sugar together. Add oil and water and stir only until the batter is smooth. Drop by spoonfuls onto a hot, greased griddle or frying pan. Cook slowly until the pancake is covered in bubbles; turn and cook until the bottom is golden brown.
