Bulgur Chef Salad
- 2 1/2 cups presoaked #2 medium or #3 coarse bulgur
- 1/8 tsp. pepper
- 1/3 cup French dressing
- 1/3 cup chopped green pepper
- 3 tbsp. chopped sweet pickle
- 1 cup thinly sliced celery
- 1/2 tsp. salt
- 2 tsp. thinly sliced green onion
- In medium bowl, blend together bulgur, dressing, pickle, salt, and pepper; chill. Add green pepper, celery, and green onion to bulgur mixture. Serve on a bed of lettuce. Top with strips of cooked ham, turkey, or chicken and Swiss or feta cheese.
