Bulgur Carrot Pineapple Salad

  • 1 cup cooked #3 coarse bulgur
  • 1/2 cup drained crush pineapple
  • 2 tbsp. pineapple juice
  • 1/2 cup mayonnaise
  • 1 1/2 cups shredded carrots
  • 1/2 tsp. salt
  1. Combine bulgur and pineapple juice; chill. Add the remaining ingredients and mix well; chill. Serve on a bed of lettuce.
