This stuffing is made easily and quickly as there is no baking involved. Since Thanksgiving can be a busy time regardless of how much you are cooking, make this ahead and save overnight.
Makes 4 cups
1/3 cup butter
2- 1/2 cups #3 coarse cooked bulgur
1/3 cup chopped onion
1/3 cup slivered blanched almonds
1/3 cup chopped celery
1/2 tsp salt
1/3 cup tart green apples, peeled, cored and diced
1/8 tsp pepper
1/2 tsp poultry seasoning
3/4 cup chicken stock
additional slivered almonds – for topping
Heat the butter in a heavy skillet; add onion, celery, apples, and giblets. Cook over moderate heat until onions are straw colored. Add bulgur, almonds, seasonings, and chicken stock. Cover and cook over moderate heat until all liquid is absorbed. Plate and top with parsley and additional almonds.
