Banana Bulgur Cake

  • 1/3 cup #1 fine or #2 medium bulgur
  • 1 1/3 cups water
  • 2 cups sifted all-purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3/4 cup mashed bananas
  • 1 tsp. lemon juice
  • 1/4 cup milk
  1. Combine the bulgur and water. Cover and bring to simmer. Simmer about 20 minutes or until most of water has been absorbed. Sift together the flour, baking powder and salt. Cream the butter and sugar until light and fluffy; add eggs. Continue to beat until thick and creamy.
  2. Blend the cooked bulgur, vanilla, bananas, lemon juice and milk. Add alternately with dry ingredients to creamed mixture. Blend well after each addition. Turn into greased 1 1/2 quart loaf pan. Bake in moderate oven (about 350 degrees) for about 1 1/4 hours.
