Baked Banana Bulgur Wheat Custard

  • 1 1/2 cups cooked #3 coarse bulgur
  • 1/2 cup mashed banana
  • 1 tbsp. lemon juice
  • 1 tsp. grated lemon rind
  • 1 tsp. vanilla
  • 1/3 cup sugar
  • 1/8 tsp. salt
  • 2 cups milk
  • 2 eggs (slightly beaten)
  • 1 tbsp. melted butter
  • cinnamon
  1. Blend all ingredients, except for the cinnamon, in a baking dish. Once fully blended, sprinkle top with cinnamon. Bake in moderate oven 40-45 minutes or until set.
  2. To cook bulgur: Add 3/4 cup dry bulgur to 1 1/2 cups boiling water; stir. Turn down to simmer for 30 minutes. Drain excess water.
