Baked Banana Bulgur Wheat Custard

Ingredients
- 1 1/2 cups cooked #3 coarse bulgur
- 1/2 cup mashed banana
- 1 tbsp. lemon juice
- 1 tsp. grated lemon rind
- 1 tsp. vanilla
- 1/3 cup sugar
- 1/8 tsp. salt
- 2 cups milk
- 2 eggs slightly beaten
- 1 tbsp. melted butter
- cinnamon
Instructions
- Blend all ingredients, except for the cinnamon, in a baking dish. Once fully blended, sprinkle top with cinnamon. Bake in moderate oven 40-45 minutes or until set.
- To cook bulgur: Add 3/4 cup dry bulgur to 1 1/2 cups boiling water; stir. Turn down to simmer for 30 minutes. Drain excess water.
