Armenian Meatball Soup

  • 2 lbs. ground lamb or beef
  • 1/4 cup #1 fine or #2 medium bulgur
  • 3/4 cup chopped parsley
  • 1/2 cup flour
  • 1 medium medium onion (chopped)
  • 2 quarts water
  • 1 tsp. salt
  • 1 8 oz. can tomato sauce
  • 1/4 tsp. pepper
  • 1 tsp. salt ((optional))
  • 1 tsp. sweet basil
  1. Knead the first 7 ingredients together. Shape into walnut-sized balls, and roll them in the flour. Prepare broth by mixing together the water, tomato sauce, and salt. Bring to boil. Add meatballs and simmer gently 45 minutes to 1 hour.
