Apple Bulgur Salad

  • 3 cups #2 medium or #3 coarse bulgur
  • 1 tsp. caraway seeds
  • 1 cup chopped celery
  • 2 small small red apples (cored and diced)
  • 1/2 cup mayonnaise
  • 1/4 lb. Swiss cheese (cut julienne)
  • 2 tbsp. coarse ground mustard
  • 1/4 cup finely chopped parsley
  1. In small bowl, mix together mayonnaise, mustard, white wine vinegar, caraway seed; set aside. In a salad bowl, combine bulgur, celery and dressing. Cover and chill at least 1 hour overnight. Stir in apples. Garnish with Swiss cheese strips and parsley.
