Aladdin Cookies

  • 1/3 cup shortening ((coconut oil is a good choice))
  • 1 cup brown sugar
  • 1 egg
  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup cold (cooked #2 medium bulgur)
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1 cup raisins or cranberries
  • 1 cup chopped walnuts
  1. Cream together oil and sugar; add egg and bulgur. Sift together dry ingredients and stir in. Add raisins and nuts. Drop on lightly greased cookie sheet. Bake at 400 degrees for 12-15 minutes.
  2. Note: Instead of greasing cookie sheet, can use parchment paper.
  3. * To cook bulgur, use 1/2 cup bulgur and add 1 cup boiling water; stir. Let sit until all water is absorbed. Fluff with a fork and refrigerate.

Makes about 20 cookies.
