Aladdin Cookies
- 1/3 cup shortening ((coconut oil is a good choice))
- 1 cup brown sugar
- 1 egg
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1 cup cold (cooked #2 medium bulgur)
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1 cup raisins or cranberries
- 1 cup chopped walnuts
- Cream together oil and sugar; add egg and bulgur. Sift together dry ingredients and stir in. Add raisins and nuts. Drop on lightly greased cookie sheet. Bake at 400 degrees for 12-15 minutes.
- Note: Instead of greasing cookie sheet, can use parchment paper.
- * To cook bulgur, use 1/2 cup bulgur and add 1 cup boiling water; stir. Let sit until all water is absorbed. Fluff with a fork and refrigerate.
Makes about 20 cookies.
