Bulgur Carrot Pineapple Salad

Ingredients
- 1 cup cooked #3 coarse bulgur
- 1/2 cup drained crush pineapple
- 2 tbsp. pineapple juice
- 1/2 cup mayonnaise
- 1 1/2 cups shredded carrots
- 1/2 tsp. salt
Instructions
- Combine bulgur and pineapple juice; chill. Add the remaining ingredients and mix well; chill. Serve on a bed of lettuce.
