Want a satisfying dinner rich in plant-based protein and nutrients that’s also easy, warming, and comforting?  Bulgur is a great addition that make soups hearty and healthy, and a great replacement for those of us who aren’t a big fan of beans. This hearty & healthy soup comes together in a flash, so you can have dinner on the table in no time.

Ingredients

1/2  cup Sunnyland Mills #3 coarse bulgur wheat  – you can buy it here on Amazon

4 cups reduced sodium chicken broth

1 to 2 teaspoons extra virgin olive oil

1 can diced tomatoes in juice

1 teaspoon Italian seasoning

1/2 small onion, chopped

1 clove of garlic, minced

1/2 cup chopped celery

1/2 cup chopped carrot

2 cups fresh spinach, shredded

1/4 cup acini de peppe pasta (or any small, round pasta)

salt and pepper to taste

freshly grated Parmesan cheese

  1. Heat oil over medium heat and sauté onion, celery, carrot and garlic about 5 minutes or until garlic is fragrant and veggies are crisp tender.
  2. Add chicken broth, bulgur, tomatoes, and seasonings. Bring to a boil, cover and cook about 10 minutes.
  3. Remove cover and add pasta and spinach. Cook, uncovered, another 6-8 minutes, or until pasta is cooked through.
  4. Serve with freshly grated parmesan cheese and a crusty Italian bread!
