Tabbouleh with Blueberries & Mint

  • 1 cup #2 medium bulgur
  • 1/2 lb. fresh tomatoes (peeled)
  • 2 cups fresh blueberries (washed and picked over)
  • 1/2 cucumber (diced)
  • 1/2 cup fresh mint leaves (finely shredded)
  • 5 tbsp. Tbsp. fresh lemon juice
  • 4 scallions
  • 1/4 cup olive oil
  • 1 tbsp. finely chopped parsley
  • 1/4 tsp. salt
  • 1/4 tsp. ground cumin
  • 1/4 tsp. freshly ground black pepper
  1. In a large mixing bowl, place the bulgur and 2 cups boiling water. Stir well and allow to stand for 5 minutes. Turn the soaked bulgur our onto a dry cloth and squeeze out any excess moisture. Return bulgur to bowl and add all ingredients. tossing gently so as not to damage the blueberries. Allow mixture to stand and marinate for 2 hours. Serve at room temperature.
