Spiced Lentil-Bulgur Pilaf

  • 2 1/2 cups water
  • 1/4 tsp. ground cumin
  • 1/2 cup lentils
  • 3/4 cup #3 coarse bulgur
  • 1/4 tsp. salt
  • 2 tbsp. feta cheese (crumbled)
  • 1/4 tsp. ground cinnamon
  • 1 tbsp. snipped parsley
  1. In a medium saucepan combine the water, lentils, salt, ground cinnamon, and ground cumin. Bring to boiling; reduce heat to low. Cover and simmer lentils for 10 minutes. Add the uncooked bulgur to the lentil mixture in the saucepan. Cover and simmer over low heat for 15 to 20 minutes more or till the lentils and bulgur are tender and liquid is almost evaporated. Spoon the pilaf onto plates. Sprinkle each serving with crumbled feta cheese and snipped parsley
