Salted Grain (Cuccia Salata)

  • 1 cup grano or Pearled Soft White Wheat (ND)
  • pecorino (ewe) cheese
  • Salt and pepper

Optional:

  • vegetables of your choice (such as cabbage, cauliflower, or dried legunes)
  1. Combine 8 cups water, salted as you would for pasta, and Grano in a pot. Bring to a boil, then reduce heat to medium. Simmer, stirring frequently, until Grano is tender but still chewy, about 30-35 minutes. Drain well, season with oil, salt and pepper, and a little pecorino (ewe) cheese, stir and serve.
  2. VARIATION: cook the vegetables of your choice separately, then add to the Grano mixture; stir and serve.
