Traditional Tabbouleh

Ingredients
- 1 cup boiling water
- 1/2 cup lemon juice
- 1 cup #1 fine bulgur
- 2 tbsp. olive oil
- 1 1/2 cups chopped tomato
- 1/2 tsp. salt
- 1 cup chopped fresh mint
- 1/2 tsp. garlic powder
- 3/4 cup minced fresh parsley
- 1/8 tsp. ground red pepper
- 1/2 cup chopped cucumber
- 1/8 tsp. black pepper
- 1/3 cup sliced green onions
- Fresh mint sprigs optional
Instructions
- Combine bulgur and water in large bowl; cover and let stand 5 to 10 minutes or until bulgur is tender and water is absorbed. Add tomato, chopped mint, parsley, cucumber, and green onions; toss well. Combine lemon juice and next 5 ingredients in a small bowl; stir well with a wire whisk. Drizzle lemon juice mixture over bulgur mixture; toss well. Transfer to a serving bowl. Garnish with fresh mint, if desired.
