Mediterranean White Bean Salad with Bulgur Wheat

  • 1 cup #3 coarse bulgur wheat
  • 2 cups boiling water
  • 1 1/2 cans (1 lb. size) white beans (drained and rinsed)
  • 3/4 cup thinly sliced celery
  • 3/4 cup minced fresh parsley

Dressing:

  • 1/4 cup white wine vinegar or lemon juice (PLUS)
  • 1/2 tsp. white wine vinegar or lemon juice
  • 1 tbsp. olive oil (optional)
  • 1 1/2 tbsp. Dijon mustard
  • 1/2 tbsp. sugar
  • 1/2 tbsp. crushed fresh garlic
  • 3/8 tsp. ground cumin
  • 1/8 tsp. ground black peppe
  1. Place the bulgur wheat in a large heat-proof bowl. Add the boiling water, stir and set aside for 30-minutes. Combine the beans, celery, onion and parsley in a large bowl and stir to mix. Combine the dressing ingredients in a jar with a tight-fitting lid and shake to mix well. Pour the dressing over the bean mixture, and toss to mix. Drain the bulgur of any excess water and add the bulgur to the bean mixture. Toss well. Cover the salad and chill for at least 2 hours before serving.
