Keyma Sandwich

  • 1 cup #1 fine bulgur
  • Cayenne pepper
  • Water
  • Paprika
  • 1 lb. lean ground beef
  • Peda bread
  • Chopped flat-leaf parsley
  • Ice water
  • Red onion
  • Salt
  • Tomato slices
  1. Add enough water to the bulgur to barely dampen it. Allow the grains to rest 10-15 minutes. Add cooked meat and mix well, adding small amounts of ice water until the mixture feels like dough. Work in salt, cayenne and paprika. Taste for seasoning. Serve on peda bread with parsley and slice of red onion and tomato.
