Fresh Mint Bulgur Salad

  • 1 chicken bouillon cube (crushed)
  • 1/4 cup lemon juice
  • 1 cup boiling water
  • 1/3 cup salad oil
  • 1 cup #3 coarse bulgur
  • Salt and pepper
  • 3 green onions (chopped)
  • leaves Mintand tomato wedges
  • 2 cup packed chopped fresh mint
  1. Dissolve bouillon water, then pour over bulgur and let stand 1 hour. Drain off any remaining liquid. Stir into bulgur the onion, mint, lemon juice, and oil. Stir several times and season to taste with salt and pepper. Cover and chill at least 2 hours or as long as 6 hours; stir often. Mound salad on a serving plate; garnish with mint leaves and tomato wedges.
