This  is a very basic yet tasty side that goes well with grilled or roasted chicken. Any type of dried fruit can be used in place of the dried cranberries or apricots. Bulgur wheat can be purchased here: 

Ingredients:

  • 1 cup water
  • ½ cup dry #3 coarse bulgur wheat
  • 1 ½ tablespoons chicken bouillon granules
  • 1 teaspoon butter
  • ¼ cup dried cranberries – sliced lengthwise
  • 1/4 cup dried apricot – diced

Directions:

Bring water to a boil in a pot, mix in bulgur, bouillon granules, and butter. Cover pot, reduce heat to low, and simmer 15 minutes.

Fluff cooked bulgur with a fork, and gently mix in the dried cranberries and apricots.
