Cheese and Squash Pilaf

  • 1 medium onion (finely chopped)
  • 1/2 tsp. basil
  • 1 cup #3 coarse bulgur
  • 1 8 oz. can tomato sauce
  • 2 tbsp. butter or margarine
  • 3 cups thinly-sliced summer squash
  • 2 cups vegetable stock
  • 1 1/2 cups ricotta cheese
  • 1 tsp. oregano
  • 1 1/2 cups grated parmesan or romano cheese
  • 1/2 tsp. salt
  1. In frying pan sauté onion and bulgur in butter or margarine until onion is slightly golden. Add stock and seasonings and cover. Simmer 15 to 20 ,minutes or until liquid is absorbed. Stir in tomato sauce and squash. Cover and simmer until squash is slightly tender. Spread ricotta cheese over mixture and sprinkle with parmesan or romano cheese. Cover and heat until dish is bubbly.
